I made a batch of Goji Squares last night, an adaptation of a friend of a friend’s recipe. A combination of goji berries, cacao nibs, coconut, hemp seeds, cocoa powder, coconut oil, honey, and salt. I don’t have permission to post that recipe, but I’ll share another one with goji berries and cacao nibs that I’ve made. I may play with these two recipes and come up with something in between next time!
Goji Cacao Energy Bars
1 cup raw cashews
1 cup date paste (about 12 large dates), packed
3 scoops protein powder (I used Show me the Whey Vanilla)
1/4 teaspoon sea salt
1 oz goji berries
2 Tbs cacao nibs
1 teaspoon coconut extract
1 teaspoon cinnamon
Line container with parchment paper. Grind raw cashews in food processor. Add dates, protein powder, and salt and whirl until they stick together – add water if needed. Add goji berries, cacao nibs, and vanilla or coconut extract. Mix well. Press dough into container to desired thickness. Cut into bar shapes. Store in an airtight container; no refrigeration needed. Keeps for at least one week.
